Domesticity continues (yes, I am wearing an apron)

Ginger Crinkles (they're more crispy than chewy)

2/3 cup vegetable oil
1 1/4 cups granulated sugar
1 egg
1/4 cup fancy molasses
1 3/4 cups all-purpose flour
2 tsp. ground ginger (I add a tiny bit more than this. I like them spicy.)
1 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt

Combine flour, ginger, cinnamon, baking powder, baking soda, and salt.

In separate bowl whisk oil with 1 cup of sugar. Whisk in egg until smooth. Whisk in molasses.

Pour dry mixture over oil mixture and stir until moist dough forms. Using 1 tbsp. dough per cookie, roll into balls. Roll balls into remaining sugar to coat.

Bake on lightly greased trays in center of oven at 190°C for 12 minutes or until cookies are flattened, cracked, and browned.

Makes 36.

* For flatter, crispier cookies press dough down with fork.
